So a friend posted about her attempts at making potato salad a week or so ago. I shared how I put mine together but didn't really have a recipe, and it got me wanting some! Today I made some potato salad, ended up I did not have any Miracle Whip or dill pickles in my house so I made do without. Here I am now, sharing how I put it together.
I used seven of these potatoes, smallish, about baseball sized (not softball!) chopped them up to be about the size of the top digit of my thumb (thumb sizes may vary).

Then I put them in a pot of water, with salt, to boil until done. I was taught that done-ness is
measured by sticking a piece of potato with a fork and if it falls right off then it is done!

1 small onion

chopped of course, do it as fine as you like, i like crunchy chunks!

Here is Ciana, modeling with the sauce. besides the mayo there is
~1/2 c fage greek yogurt (didn't have any sour cream)
~1/4 c yellow mustard,
~1/4 tsp of the following spices: salt, paprika, garlic powder, dill weed, cayenne pepper
~ 1 1/2 tbs apple cider vinegar,
~2 tbs white sugar,
~1/2 tsp freshly ground black pepper.

I've added the potatoes and 6 boiled eggs to the sauce and stirred it up. Will make room in the fridge to chill it together for at least 30 min before eating. I am so going to take some for lunch at work tomorrow!
